Bibingka (Filipino Rice Cake)

Ingredients
  • 1 – 1 lb box of Mochiko brand rice flour
  • 7 oz. shredded sweetened coconut
  • 2 cups sugar
  • 6 eggs
  • 2 teaspoons vanilla extract
  • 1 Tablespoon baking powder
  • 1 – 12 oz. can evaporated milk
  • 8 oz. sour cream
  • 1 stick of butter melted

Instructions
  1. Preheat oven to 350 degrees.
  2. Mix all of the ingredients in a large bowl.
  3. Pour into a well greased 13 x 9 x 2 pan.
  4. Bake for at least 45 minutes or until a toothpick placed in the middle of the pan comes out clean.
