Hawaiian Kalua Pork

Ingredients
- 5 lbs. pork butt
- 3 Tablespoons Hawaiian salt (Kosher salt may be substituted)
- 3Tablespoons liquid smoke
- 2 garlic cloves sliced (optional)
- ½ cup chicken stock
- Banana leaves (find in freezer section of Asian market)
Instructions
- Preheat oven to 350 degrees.
- Make several shallow long slashes along the lines of the roast.
- Rub salt and liquid smoke liberally over roast. If you like, you can place pieces of garlic in the roast.
- Wrap roast in 2 layers of banana leaves.
- Then wrap the roast and banana leaves in aluminum foil. Seal tightly and tie with twine.
- Place pork in a roasting pan with the fat side up. Add the chicken stock.
- Cook pork for 350 degrees for one hour. Then turn oven down to 325 degrees for 3 hours.
- Remove the pork from the pan and allow to cool.
- Use two forks to shred the pork and serve.
